Vegan poke bowl: An alternative version to try

So what does a vegan poke bowl consist of 🤔? It is mainly based on replacing the cured salmon with another ingredient, but it offers more possibilities for preparation, making it a truly unpredictable dish. Let’s take a look!

The salmon substitute in our vegan poke bowl

The key to the dish. From the original with cured salmon to the vegan alternatives. What do vegans prefer in their poke bowl?

Generally, firm tofu or tempeh. We’d say that’s the classic choice. In this case, the key is the marinade. If we want it to evoke the sea, marinate it in soy sauce, lime and a touch of nori seaweed powder. Delicious.

But there are other alternatives:

◻️ Innovation (raw texture): Marinated watermelon or tomato. The vegan poke bowl with lightly roasted watermelon cubes, after marinating them in soy sauce and sesame oil, has a texture that looks just like tuna or salmon. There you’d have a vegan poke bowl almost identical to the original 😉.

◻️ "Real food"option: Pulses. Some spiced chickpeas or a good base of edamame (which is usually already included) provide the necessary protein. We have to say, this has been very trendy lately.

So here’s your vegan poke bowl, ready to enjoy

At Generation B, we always focus on the balance between complex carbohydrates, healthy fats and micronutrients. Our next vegan poke bowl could consist of:

ToppingSuggested ingredients
The baseBrown rice, quinoa, black rice (venere) or a bed of green sprouts for a low-carb version.
The proteinMarinated tofu, Heura, tempeh or pulses.
The vegetable "crunch"Cucumber, sliced radish, grated carrot, red cabbage (adds a brilliant colour).
Healthy fatsAvocado (essential), hemp seeds or nuts such as cashews.
A touch of the seaWakame seaweed or strips of nori seaweed to maintain that ‘ocean’ flavour.

As you can see, this follows on from what we’ve discussed so far: which substitutes we’d choose for cured salmon and, above all, that touch of the sea that every poke bowl must have. With this base, the possibilities are endless and the variations, many.

When we add the vegan poke bowl to our menu, it’ll look just like the picture we’re showing you here 🤤, for sure.

This is our poke bowl at Generation B

Tropical and fresh, it contains:

  • Cured salmon.
  • Marinated pineapple.
  • Mustard with agave.
  • Brown rice.
  • Fresh cucumber.
  • Fresh salad.

It has always been said (and we agree) that for a poke bowl to be nutritionally complete, you need to include a source of vitamin C (such as a squeeze of lime, raw red pepper or a piece of fruit alongside the pineapple in our bowl) to improve the absorption of the iron found in vegetables and pulses.

Conclusions

The original poke bowl contains salmon, but it is by no means the only option available. Chicken and tuna versions are also found in many restaurants, as well as options featuring cooked prawns or octopus instead. And of course, the new vegan trend with tofu or other variations featuring diced watermelon with soya, chickpeas or edamame.

Versatility rules!

At Generation B, we’re the go-to spot for healthy bowls in Barcelona, and among the most popular is the cured salmon poke bowl. We don’t currently have a vegan poke bowl on the menu, but it’s in the pipeline as one of our upcoming new additions 😉. We’ll let you know when we add it!
